The summer is just around the corner, which means it’s grilling season. So, it’s time to fire up the grill and start making our favorite summer foods.
One of my favorite things to cook in the summer is foil packets because they are super easy to make, versatile, you literally add anything in it, and my family loves them.
Ingredients Notes & Substitutions
Sausages: we love the sweet and spicy combo, so I used Aidells® Spicy Mango with Jalapeno Sausages, but feel free to use your favorite sausage.
Veggies: Switch up the veggies to adapt this recipe to your family’s taste. Mushrooms, asparagus, corn, and potatoes are a great addition.
Step By Step Recipe Photo Tutorial
1 – First, slice all the sausages and veggies.
2 – Mix everything in a bowl and add seasoning. Toss until well combined.
3 – Cut four sheets of foil, about 12-inches long. Divide the mixture into equal portions and add to the center of each foil in a single layer. Fold the sides of the foil, covering completely and sealing the packets closed. Place foil packets on the grill and cook until just cooked through, about 15 minutes, or until the veggies have reached desired tenderness. Serve immediately, garnished with chopped cilantro, if desired.
How to Grill Mangoes
Heat the grill to medium-high. Slice the mangoes in 2 pieces from the pit. Score the flesh of the mangoes with a sharp knife in a square pattern, be careful not to cut into the skin. Brush the flesh with the oil and grill, cut-side down, until slightly charred, about 1-2 minutes.
Place grilled mangoes on a platter and immediately drizzle with the lime juice and sprinkle with the salt, and any other condiment you like, such as chili powder or chipotle pepper. Serve.
Extra Tips
- Use heavy-duty foil–this ensures everything stays in these packets and they don’t easily rip or tear.
- Generously spray the foil to keep the veggies from sticking.

Ingredients
For the Sausage and Veggies Foil Packets:
- 12 oz Aidells Spicy Mango with Jalapeno Sausage, sliced into 1” rounds.
- 1 red pepper, sliced into strips
- 1 green pepper, sliced into strips
- 2 medium zucchinis, trimmed and sliced into bite-sized pieces
- 1 red onion, sliced into strips
- 3 garlic cloves, minced
- 3 tablespoons olive oil
- 1 teaspoon kosher salt, or to taste
- 1/2 teaspoon freshly grated black pepper, or to taste
- 1-2 teaspoon chipotle chili pepper
- 1 tablespoon dried oregano
- 2 tablespoons chopped fresh cilantro leaves (optional)
- heavy Duty Foil
For Grilled Chipotle Mangoes:
- 2 ripe mangoes
- 2 tablespoons canola oil
- 1 lime
- 1/2 teaspoon kosher salt or sea salt
- 1/4 teaspoon chipotle chili pepper
Instructions
For the Sausage and Veggies Foil Packets
Grill:
- Preheat grill to medium-high heat.
- Combine in a large bowl the sausage, bell peppers, zucchinis, red onion, garlic, olive oil, salt, black pepper, chipotle chili pepper, and oregano. Toss until well combined.
- Cut four sheets of foil, about 12-inches long.
- Divide the mixture into 4 equal portions and add to the center of each foil in a single layer.
- Fold the sides of the foil, covering completely and sealing the packets closed.
- Place foil packets on the grill and cook until just cooked through, about 15 minutes, or until the veggies have reached desired tenderness.
- Served immediately, garnished with chopped cilantro, if desired.
You can also make a sheet pan in the oven:
- Preheat oven to 425º F. Line a baking sheet with foil.
- Combine in a large bowl the sausage, bell peppers, zucchinis, red onion, garlic, olive oil, salt, black pepper, chipotle chili pepper, and oregano. Toss until well combined.
- Place sausage mixture on the prepared baking sheet and bake for 20 – 25 minutes, or until the veggies have reached desired tenderness.
- Served immediately, garnished with chopped cilantro, if desired.
For Grilled Chipotle Mangoes:
- Heat the grill to medium-high.
