Easy Chicken Cacciatore Recipe
Chicken is one of my favorite things to cook because it’s something the whole family will eat, it’s extremely versatile, and it’s pretty affordable. Plus, I always have chicken on hand.
When it comes to chicken I prefer breasts, especially when I’m trying to put dinner on the table under 30 minutes.
Oh yeah… I relying on 30-minute meals!!
These Easy Chicken Cacciatore recipe really fulfill all my expectations. It’s delicious, full of flavor, and hearty.
What is Chicken Cacciatore?
In case you are wondering, Cacciatore, means “hunter” in Italian. In cuisine, alla cacciatora refers to a meal prepared “hunter-style” with onions, herbs, tomatoes, bell peppers, and wine.
This Easy Chicken Cacciatore recipe reminded me of my mom’s “pollo guisado”. It’s exactly like this chicken. It has the same taste and same look. The only two differences that I found between this recipe and my moms’ are that she use fresh onions and green olives instead of Kalamata olives.

I loved all the vegetables in this dish! Mushrooms, green peppers, onions, carrots, tomatoes, and olives. I also used lots of garlic. What can I say? I’m a garlic lover and I think that garlic enhances the flavors.
How to get rid of the garlic smell on your hands
To remove the garlic smell off your hands just rinse with cold water and rub your fingers over something made of stainless steel, like a spoon, sink, the faucet. I always use a spoon and works all the time.
How to make Chicken Cacciatore
First, brown the chicken to golden perfection. Then, saute the veggies, add the wine and simmer all together until cooked through. Finally, add the vinegar and olives. Garnish with Italian parsley and serve.
How long does chicken cacciatore last in the fridge?
Chicken cacciatore will last up to 3 days in the fridge. Make sure to allow the chicken to cool completely, cover and then refrigerate.

What goes best with chicken cacciatore?
I love to serve Chicken Cacciatore with rice, mashed potatoes, or polenta. Pasta or gnocchi will work great too.
What kind of wine goes with chicken cacciatore?
For white meat chicken (chicken breasts) use Sauvignon Blanc or Chardonnay. If using dark meat chicken, such as chicken tights, serve with Pinot Noir or Zinfandel.

Easy Chicken Cacciatore
Ingredients
- 4 – 6 skinless and boneless chicken breasts
- Salt and pepper to taste
- 3 tablespoons olive oil
- 8 oz cremini mushrooms, sliced
- 1 large green pepper, stemmed, seeded, and cut into strips
- 1/2 cup carrot, peeled and sliced
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 14.6 ounces (1 can) diced tomatoes, undrained
- 1 1/2 cups frozen pearl onions
- 1 teaspoon dried oregano
- 2 tablespoons balsamic vinegar
- 1 cup pitted Kalamata olives, sliced (or whole if you prefer)
- 1/4 cup snipped fresh Italian parsley (optional)
Instructions
- Season chicken breasts with salt and cracked black pepper to taste.
- Heat 2 tablespoons of oil in a large skillet over medium heat. Cook chicken until browned on both sides, about 5 minutes. Remove chicken from skillet; set aside.
- Add the remaining tablespoon of oil to the same skillet. Add mushrooms, sweet pepper, carrot, and garlic; cook for 3-4 minutes. Add wine; simmer, uncovered, until liquid is reduced, about 5-6 minutes. Add tomatoes, onions, and oregano; stir to combine. Return chicken to skillet. Reduce heat to low and simmer, covered, for 15-20 minutes or until chicken is done (175º F). Note: If your chicken breasts are too thick it might need more cooking time.
- Stir in balsamic vinegar and let simmer for 2-3 minutes. Taste, and adjust salt if necessary.
- Sprinkle with olives and parsley, if desired. Serve.
