I LOVE one pot meals. They are so convenient, easy to make, and always delicious. One-Pot meals fascinate me in so many ways. First of all, the only thing I have to do is toss all ingredients in one pan and let them sizzle! And if that wasn’t enough they require hardly any clean up. Easy Skinny Arroz con Pollo
Ingredients
- 1 cup long grain white rice uncooked
- 1 1/2 cups water
- 3/4 cup chicken cooked
- 1/2 cup green peas frozen
- 1/4 cup bell green pepper chopped
- 1/4 cup onion chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
Instructions
- Place all ingredients into a rice cooker or covered medium saucepan and cook at medium low heat until done, about 25 minutes.
- Serve hot.
