This Easy Watermelon Summer Salad is sooo easy to make that I can barely call it a recipe. it’s just cutting out some fresh ingredients, tossing, and enjoying. All the goodness without the guilt. Done in 15 minutes.
I’m not always drawn to try unusual combinations and to be honest, watermelon salad wasn’t something I was thrilled to taste. I am so glad I ventured out of my comfort zone. I loved this salad.

Ingredients You’ll Need

For the Salad:
- Watermelon
- Cherry tomatoes – I used mixed medley tomatoes.
- English cucumber
- Bean sprouts
- Queso fresco
- Fresh parsley and mint leaves
For the Dressing (to taste):
- Olive oil
- Balsamic glaze
- Salt and black pepper
How to Make Watermelon Salad

1 – Cut. This watermelon salad starts cutting into cubes the watermelon, cucumbers, and tomatoes.
2 – Add Herbs. To amp up the flavor and freshness, I added both parsley and mint leaves, but you can choose one or the other if you prefer. Basil leaves would be a wonderful addition too.
3 – Toss. Then I tossed the salad with olive oil, balsamic glaze, salt, and freshly cracked black pepper.
4 – Add Cheese. Last but not least, add the crumbled queso fresco tops it all. You can also use feta cheese or goat cheese for a nice saltier contrast.
Recipe Tips
Watermelon: You can either use a melon baller to scoop the watermelon out into balls, or use a knife to cut the watermelon into squares.
Extras to add-in. Feel free to get creative with this salad. Try adding in diced red onion, sliced avocado, or some fresh arugula or baby spinach for more greens.
Seeds: I recommend buying a seedless watermelon and cucumber to save time.
Serving Ideas

Storing Instructions
Store: This salad tastes best if served the first day. Watermelon is a super watery fruit, so it won’t hold up too long in the refrigerator.

- 4 cups watermelon, cubed
- 24 oz cherry mixed medley tomatoes, halved
- 1 English cucumber, small diced
- 1 cup bean sprouts
- ½ cup Queso fresco, crumble (or to taste)
- Fresh parsley and mint leaves, chopped (optional)
For dressing (to taste)
- Olive oil
- Balsamic glaze
- Salt and black pepper
Instructions
- In a large bowl combine watermelon, ripe tomatoes, cucumber and bean sprouts; mix to combine.
- Add crumbled queso fresco and some chopped parsley and mint.
- Drizzle with olive oil and balsamic glaze. Then sprikle with salt and pepper, toss and serve.
