To mimic the “eggy” flavor and texture you will need three ingredients: cornstarch, black salt or Kala namak, and nutritional yeast.
And NO…these eggless French toast will not taste cheesy or weird. The nutritional yeast and black salt can be found in most natural food stores or online.

- Milk: For cooking and baking, I like to use whole milk. However, you can use any milk you have handy.
- Cornstarch: This ingredient will help to thicken the mixture and create the “custard”.
- Spices: I add ground cinnamon and ground nutmeg. These will boost the flavor of your French Toast. A sprinkle of pumpkin pie spice or gingerbread spice also tastes great during the holidays.
- Sugar: Regular white granulated sugar o caster sugar.
- Black salt: I only use it to add the “eggy” taste to the custard. You can omit it or substitute it for regular salt.
- Nutritional yeast: In this recipe, the nutritional yeast will add a rich touch of flavor. If not available, you can substitute for 1 more tablespoon of cornstarch.
- Vanilla Extract: For optimal flavor, reach for pure vanilla instead of imitation. Even better, try homemade vanilla extract!
- Butter — The butter is used to fry the french toast. This gives it a crisp exterior, as well as a rich, buttery flavor. You can use salted or unsalted butter.
- Bread — The perfect French toast really starts with the bread. I like to use a thick and soft variety such as eggless brioche because it gets extra crispy on the outsides while remaining tender and flavorful inside. You can use sandwich bread, but you won’t get the same flavor. Thick slices work best.
- For serving: Confectioner’s sugar, pure maple syrup, and/or fresh berries.

1 – Make the Mixture
Mix milk, cornstarch, cinnamon, sugar, black salt, nutritional yeast, and vanilla in a shallow baking dish.
2 – Dip the Bread
Dip bread in egg mixture, turning to coat both sides evenly.
3 – Fry the Bread
Heat 2 tablespoons butter in a skillet over medium heat. Fry the bread slices until golden brown, 3 – 4 minutes per side. Wipe skillet, and repeat with remaining butter, and bread.
Pro Tip: If you’re making breakfast for a crowd and have to make multiple batches of French toast, keep them warm in the oven. Simply preheat the oven to 250º F. Then, place a wired rack on a baking sheet and place the fried French toast on the rack; place it in the oven while cooking the remaining bread. It keeps the bread warm and crispy, without drying it out.
4 – Serve and Add Toppings
Dust with confectioner’s sugar, if desired, and serve warm with pure maple syrup and fresh berries.

Since this recipe does not have eggs, they last a little more than the traditional egg version. To store French toast, let them cool completely, then wrap them with aluminum foil to keep moisture. Refrigerate for up to 3 days or freeze for 2 months.

Frozen French toast can be reheated directly from the freezer. OVEN: Preheat oven to 350°F. Place a wire rack on a baking sheet and place the frozen French toast on the rack; place in the oven and bake for 10 – 15 minutes, flipping once about halfway through baking. MICROWAVE: Reheat the French toast for 2 minutes on high, but they will not be as crisp coming out of the microwave as they would from the oven.

- 6 slices eggless bread (thick slices, approx.1-inch)

I tried to make this French toast but it doesn’t get cooked properly from the inside. Even if the toast is golden brown from the outside, it is mushy and uncooked from the inside. Thank you for posting your journey and story because your web site looks so good and professional that, upon seeing sponsored content, I wondered if you were real. The french toast was super delicious! Spouse eats animal-based and I eat plant-based food. I used plant-based milk and skipped the cinnamon and nutmeg per spouse pref on the first slice. He smelled “egg” batter (thanks to black salt) and saw me put his butter in pan. He loved it! I added one teaspoon of ground golden flax seed to give batter that slightly gelatinous consistency and added a few shakes of cinnamon and nutmeg to disguise any visible flax specks. Spouse loved it, enjoyed the hint of cinnamon-nutmeg, and so did I.

Yaaass! First of all I’m allergic to eggs. So it’s Mother’s Day. DH decides he wants to make me stuffed French toast and he’s looking up a recipe. He goes “find me a recipe with no egg”.
